Brittany to Borgergade
Monkfish was founded by Rikke Salling in 2007, but the idea behind the bureau reaches further back – to a fish market in Brittany in the 1980s. Every summer, Rikke visited with her family, and it was there she first discovered the monkfish. Strange-looking, almost prehistoric, unassuming on the outside yet exceptional in flavour. The more she learned about the so-called “sea devil,” the more it fascinated her.
Intelligent.
Adaptive.
Persistent.
A creature that navigated its world with quiet confidence. It stayed with her – and eventually, it became the inspiration behind Monkfish.
